To prepare the Hazelnut Or Almond Truffles, gather the following ingredients:

  • 2/3 cup finely ground toasted almonds or hazelnuts
  • 7 tablespoons melted butter
  • 3 ounces bittersweet chocolate
  • 3 ounces milk chocolate
  • 1 tablespoon Amaretto (for almond) or 1 tablespoon Frangelico (for hazelnut)
  • 4 egg yolks
  • 2/3 cup confectioner’s sugar
  • 1/2 teaspoon vanilla extract
  • 1 1/2 teaspoons almond extract

This recipe yields about 30 delectable truffles, perfect for sharing or indulging in by yourself.

Start by finely chopping the toasted nuts in a blender or food processor. Slowly drizzle in 3 tablespoons of melted butter and process until well mixed. Set this nut mixture aside for later use.

In a small saucepan, heat the remaining 4 tablespoons of butter until hot and bubbly, being careful not to let it burn. Remove from heat and add the bittersweet and milk chocolate. Stir constantly until the mixture is smooth and melted. Set aside.

In a large bowl, beat the egg yolks until foamy. Gradually beat in the confectioner’s sugar, then add the vanilla extract, almond extract, and the chosen liquor (Amaretto or Frangelico). Continue beating until the mixture thickens.

Using a mixer on slow to medium speed, gradually beat in the nut mixture, followed by the melted chocolate mixture. Beat until the mixture is smooth and well combined. Cover the bowl with plastic wrap and refrigerate for at least thirty minutes, allowing the mixture to firm up.

Prepare your choice of coating by placing it in separate bowls. Options for coating include toasted coconut, chopped nuts, unsweetened cocoa, powdered chocolate, or crushed Oreo® Cookies.

Take a teaspoonful of the truffle mixture and roll it into a ball using your fingers, working quickly to prevent the chocolate from melting. Drop the ball into one of the coating bowls. Repeat this process until you have 4 or 5 truffle balls in each coating bowl. Gently roll the truffles in the coating mixture until they are evenly covered. Place them on a sheet of waxed paper.
