To start, gather the following ingredients:

  • 1 tablespoon of oregano
  • 2 tablespoons of paprika
  • 2 tablespoons of MSG (monosodium glutamate)
  • 9 tablespoons of light chili powder
  • 4 tablespoons of cumin
  • 4 tablespoons of beef bouillon (instant, crushed)
  • 24 ounces of Old Milwaukee beer
  • 2 cups of water
  • 4 pounds of extra lean chuck, chili grind
  • 2 pounds of extra lean pork, chili grind
  • 1 pound of extra lean chuck, cut into 1/4-inch cubes
  • 2 large onions, finely chopped
  • 10 cloves of garlic, finely chopped
  • 1/2 cup of Wesson oil (or kidney suet)
  • 1 teaspoon of mole (powdered), also called mole poblano
  • 1 tablespoon of sugar
  • 1 teaspoon of coriander seed (from Chinese parsley, cilantro)
  • 1 teaspoon of Louisiana red hot sauce (Durkee’s)
  • 8 ounces of tomato sauce
  • 1 tablespoon of masa harina flour
  • Salt, to taste

In a large pot, combine paprika, oregano, MSG, chili powder, cumin, beef bouillon, beer, and 2 cups of water. Allow the mixture to simmer.

In a separate skillet, brown the meat in batches of 1 or 1 1/2 pounds at a time, using Wesson oil or suet. Once browned, drain the meat and add it to the simmering spices. Repeat this step until all the meat is cooked and added to the pot.

Next, sauté the chopped onions and garlic in 1 tablespoon of oil or suet. Once they are golden and aromatic, add them to the pot with the spices and meat mixture. Add water as needed to maintain the desired consistency. Let it simmer for 2 hours.

Afterward, incorporate the mole, sugar, coriander seed, hot sauce, and tomato sauce into the pot. Allow the chili to simmer for an additional 45 minutes.
