In a separate bowl, cream together 1 cup of shortening and 1 1/2 cups of brown sugar. Add 2 eggs, followed by 1 cup each of ground raisins and nuts. Mix in the dry ingredients until just combined. For the light mixture, mix together 2 cups of flour, 1/4 teaspoon of salt, and 1/2 teaspoon of baking soda. In a separate bowl, cream together 1/2 cup of shortening and 3/4 cup of sugar. Add 1 egg, 1 teaspoon of vanilla, and 2 tablespoons of water. Mix in the dry ingredients until just combined, then stir in 1/4 cup of chopped candied cherries. Roll both mixtures out into rectangles, place the light mixture on top of the dark mixture, and roll them up into a log. Slice the log into cookies, and bake for 8-10 minutes at 375 degrees Fahrenheit.
