  • 1 (10.75 ounce) can Campbell’s® Condensed Cream of Mushroom Soup or Campbell’s® Condensed 98% Fat Free Cream of Mushroom Soup
  • 1 1/4 cups water
  • 1/2 cup milk
  • 1/4 cup shredded part-skim mozzarella cheese
  • 3 tablespoons grated Parmesan cheese
  • 1 1/2 cups frozen mixed vegetables
  • 1/2 pound skinless, boneless chicken breast, cut into cubes
  • 3/4 cup uncooked Arborio or regular long-grain white rice

Let’s get started! Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius) to prepare for the baking process.

In a 3-quart shallow baking dish, mix together the condensed cream of mushroom soup, water, milk, shredded mozzarella cheese, grated Parmesan cheese, frozen mixed vegetables, chicken cubes, and rice. Ensure that all the ingredients are thoroughly combined. Cover the baking dish to trap the flavors and moisture.

Place the covered baking dish in the preheated oven and bake for approximately 35 minutes. After this initial baking period, remove the dish from the oven and give it a good stir to evenly distribute the ingredients. Return the dish to the oven and bake for an additional 10 minutes or until the mixture is hot, and the rice is perfectly cooked.

Once the Baked Chicken and Cheese Risotto is done baking, let it stand for 5 minutes to allow the flavors to meld and the dish to settle.
