The Chocolate Cookbook

The Chocolate Cookbook – Indulge in the rich and luscious flavors of a Potato Chocolate Cake from “The Chocolate Cookbook.” This sensational recipe combines the unexpected addition of mashed potatoes with the velvety goodness of chocolate, resulting in a moist and irresistible cake. Prepare to delight your taste buds with this unique and delectable dessert.

Ingredients:

  • 3/4 cup butter or margarine, softened
  • 2 cups sugar
  • 4 eggs, separated
  • 1 cup mashed potatoes
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 3 tablespoons baking cocoa
  • 2 teaspoons baking powder
  • 1 cup chopped walnuts
  • 1 (16 ounce) container chocolate frosting

Instructions:

  1. In a large mixing bowl, cream the softened butter or margarine with the sugar. This step ensures a smooth and fluffy texture in the cake.
  2. Add the egg yolks, mashed potatoes, water, and vanilla extract to the creamed mixture. Blend them well until the ingredients are fully incorporated. The mashed potatoes add moisture and a unique texture to the cake, while the vanilla extract enhances the overall flavor.
  3. In a separate small mixing bowl, combine the all-purpose flour, baking cocoa, and baking powder. Mix them together thoroughly. These dry ingredients provide the foundation for the cake’s structure and add depth to its chocolatey taste.
  4. Gradually add the dry ingredient mixture to the creamed mixture, stirring until well combined. This ensures that the batter is smooth and uniform in texture.
  5. In another small mixing bowl, beat the egg whites until stiff peaks form. This step adds airiness to the batter, resulting in a lighter and fluffier cake. Gently fold the beaten egg whites into the batter along with the chopped walnuts.
  6. Pour the batter into a greased 13-in. x 9-in. x 2-in. baking pan, spreading it evenly. This ensures even baking and a uniform texture throughout the cake.
  7. Bake the cake in a preheated oven at 350 degrees F for 30-35 minutes, or until a toothpick inserted near the center comes out clean. This baking time ensures a moist and fully cooked cake.
