The Stew Cookbook – To begin, coat the beef short ribs with a generous amount of all-purpose flour. Heat canola or vegetable oil in a large skillet over medium-high heat. Brown the ribs on all sides, ensuring they develop a rich, golden color without burning.
While the ribs are browning, dissolve beef bouillon cubes in hot water in a pressure cooker. Once the ribs are well-browned, transfer them to the pressure cooker and seal it. Cook according to the manufacturer’s directions for 25 minutes, allowing the flavors to meld.
After the pressure is released, open the cooker and add diced or stewed tomatoes, thinly sliced garlic, chopped onions, and sliced carrots. Let the stew simmer uncovered until the vegetables reach a tender consistency, infusing the dish with their delightful flavors.
Meanwhile, cook the diced potatoes separately in water until they turn tender. Once done, drain the potatoes and set them aside.
Transfer the meat to a serving platter, and in a separate bowl, dissolve all-purpose flour in water. Add this mixture to the vegetables, allowing the sauce to thicken over a gentle heat for about 5 minutes.
Next, incorporate the cooked potatoes and a can of peas, including the liquid. Heat the stew until everything is warmed through, ensuring the flavors meld together harmoniously. Season the stew with salt and pepper according to your taste preferences.
