To begin, gather the following ingredients:

  • 1 cup of vanilla wafer crumbs
  • 1/2 cup of chopped pecans
  • 3 tablespoons of granulated sugar
  • 1/4 cup of melted margarine
  • 16 ounces of softened cream cheese
  • 1/2 cup of packed brown sugar
  • 2 large eggs
  • 6 ounces of melted semi-sweet chocolate chips
  • 3 tablespoons of almond-flavored liqueur
  • 2 cups of sour cream
  • 2 tablespoons of granulated sugar

Start by combining the vanilla wafer crumbs, chopped pecans, granulated sugar, and melted margarine. Press this mixture onto the bottom of a 9-inch springform pan. Bake the crust at 325 degrees F for 10 minutes until it sets.

In a separate bowl, combine the cream cheese and brown sugar. Use an electric mixer on medium speed to blend them until well combined. Add the eggs, one at a time, mixing well after each addition. Stir in the melted semi-sweet chocolate chips and almond-flavored liqueur. Pour this decadent mixture over the crust in the springform pan.

Bake the cheesecake at 325 degrees F for 35 minutes. Once done, increase the oven temperature to 425 degrees F. In another bowl, combine the sour cream and granulated sugar. Carefully spread this mixture over the baked cheesecake and return it to the oven for an additional 10 minutes at 425 degrees F.

After baking, allow the cheesecake to cool before removing the rim of the springform pan. For the best results, refrigerate the cheesecake to let it chill and set.
